  1. All coffees do not taste the same- that is the magic of coffee. If, in your experience, coffees taste the same; you must be drinking diner coffee or home brewed coffee from pre-ground beans. I roast my coffee beans a 1/2 pound at a time and usually have about 6 different varietals on hand to roast. I grind the beans as they are brewed and usually have 2 or 3 varietals available to brew. Today I have a Rwanda wet process and a Ethiopia Gesha wet process coffee. The Rwanda is roasted to City + and the Ethiopia is roasted to City. Both are magnificent but different- the Rwanda has a nutty and floral nose and tastes of baking spice and pepper. The Ethiopia is just crazy! It has a nose of violets and Jasmine and tastes of lemon peel, rock candy sweetness and peaches. Coffee, if properly roasted and brewed is most interesting.
