    The bitter coffee does balance the sweet of desert, but the primary driver is that it became customary to offer guests something after the meal. Instead of liquor (which costs more & may not be socially acceptable in your culture), coffee became an option. It also isn’t tea which has economic implications as well.
    After ~16 centuries in the Arab world, it has become part of the ritual of a fine meal around the globe.

  3. There are so many reasons that people drink coffee after meals. Some people think that it may help them to digest or something. The main cause i think is the food habit. Normally people have a habit of drinking coffee after completing their daily meal. It makes them fresh and energetic. Also it makes a nice feelings.

    I drink coffee all through the day when I am awake and lot of times working late at night from home. I drink coffee after a meal most of the time except summer.
    I won’t cite all the spurious benefits of drinking coffee after a meal but I drink it because I like it. I have no idea if it has benefits or causes harm ( pretty sure there will be another questionable study that will cite harm) but I like it and drink it.
    I also have the widest selection of contraptions for making coffee. Regular coffee maker, Espresso maker, French press coffee maker, cafe au lait maker, Arabic coffee maker ( not much to it) and a Breville milk frother as well. So you might have guessed by now I love coffee and drink it all day and night when I am awake.

  7. I would add to the other answer that coffee will reduce your appetite, which is why it wouldn’t be consumed before a meal. The bitterness of coffee pairs well with sweet deserts (and even starchy/sweet breakfasts). I would think it does not pair well with savory foods but my addiction to coffee in the morning allows me to consume it even with omelets. A cheese coarse after dinner would typically not be served with coffee.

  11. Well, liquor flavored coffees are all the rage right now here in the US, which may be beneficial for dieting. Why? Because instead of dessert, a cup of the flavored coffee offers minimal calories, assuming only a touch of cream is added. There are also non alcoholic flavored coffees as well.
