This is probably because you are using a mug that is too big.
When I used a Keurig machine with a large mug, I would sometimes brew two “small” size cups of coffee, using two K-cups, to get a strong enough brew.
A standard K-cup will give you a decently strong 6 ounce cup of coffee.
Why do Keurig cups make weak coffee?
Because subjectively you prefer stronger coffee.
There are many ways to make coffee. Keurig is perfectly acceptable to many people. If you want something that appeals to your individual taste, you cannot rely on a mass-market appliance to deliver.
Most Keurig and compatible machines have a water setting that allows you to select how much water goes through the grounds. The default is set for generally accepted American tastes which is really nothing more than flavored water in my unorthodoxly American opinion. On most machines you can set it so that less water is used. You get less coffee, but it is a usable strength. If you want more sufficiently strong coffee than Keurig machines provide, you will need to use more grounds than can be accommodated by a K-Cup. As an interesting aside regarding typical American preferences, my mother made coffee for my Danish exchange brother’s mother one morning. His mother was quite amused that she could see the spoon at the bottom of the cup.
