There is a surprising amount of overhyped bad coffee to be found in Austin. Up vote for Anderson’s and downvote for Houndstooth.
I’d recommend Texas Coffee Traders. It’s been around since 1994, and feels very Austiny. The people there are friendly and will give you recommendations and spend time helping you find the right beans.

Anderson’s Coffee and Tea
They roast good beans on premises and have since the 70’s. Go there on roasting day and buy their freshly roasted Mocha Java, run straight home and make truly great coffee. It doesn’t keep long, like fresh flowers, so enjoy it now and buy more next week.
Photographer Russell Lee introduced me to this coffee long ago and the buttermilk battered french fries at Hyde Park Bar and Grill. This is real Austin stuff.
I would say the Cuvée beans that are sold at a few places around town. Cafe Medici and Once Over come to mind.
Additional edit: I just remembered Houndstooth, they stock beans from Counter Culture as well as Intelligentsia. Pricey beans but definitely nice once and a while.
