In the many cafes that I have owned, built and managed, the set up of the water supply system for my commercial espresso machines involved the mains water passing through a carbon water filter with replaceable cartages and then through a water softening unit containing rock salt like this one pictured below.

  2. There have been several different systems over the years, so the setup in a brand new store probably wouldn’t be the same as a 20 year old store. However, the basic concepts are pretty much the same for all food service establishments. Usually a system serves all of the incoming water that will be used for any drinking or food preparation purposes. Sometimes a separate, unfiltered line would go to the back sink area for hot water, filling mop buckets, restrooms, etc., where the expense of filtered water would not be necessary.
    A typical system would look like this, with replaceable canisters that filter out particulate or sediment debris, remove undesirable odors and tastes, and remove mineral content to prevent scale buildup in pipes and equipment.
