This has actually been answered on Quora before, but just to sum up.
SHC: Powdered hot chocolate + hot water
CHC: Mocha syrup + steamed milk
Signature hot choclate is only milk and choclate . The choclate also contains pre mix sugar .
Classic hot choclate is almost same as signature hot choclate however some extra sugar and vanilla is added in it …. In other words classic hot choclate is signature hot choclate added with vanilla and additional sugar

I am a Starbucks barista in the US, and on the current menu we have only the “Classic” hot chocolate made of mocha sauce, vanilla, whipped cream and mocha drizzle. I have never heard of the “Signature” hot chocolate in my time working for the company, but there was once a time when they served the “Signature” around the year 2008. I googled the recipe and this came up: “ Signature Hot Chocolate is made with Starbucks ® exclusive cocoa blend, steamed non-fat milk and topped with whipped cream.” We do carry other hot chocolate variations including white hot chocolate, snickerdoodle, and salted caramel mocha hot chocolate in the fall.
Honestly.I don’t know. Starbucks Coffee, for me, Over Priced and Under Quality. My Neighborhood convenience store sells Coffee and Hot Cocoa for only $0.99.
There is a little difference between these sweet recipes by Starbucks. As the signature hot chocolate consists sugar, milk and chocolate obviously.
