  1. I don’t think there is a way to open that type of brick and reseal it. First of all, it is very well packed due to having been compressed and sealed under vacuum, so I wouldn’t be surprised that if you opened it, removed a small amount, and then measured the volume you might have more volume (not weight) than before you opened the package.
    I open those and put them in another container while I use them up. If I really wanted to vacuum pack them again (or put them in a container without oxygen) I’d use one of those vacuum packaging things, either resealing it in a flexible plastic bag (made for the purpose) or in a rigid container (again, made for the purpose with a place to attach a hose to create the vacuum (via a vacuum pump) and then seal the container).

  2. Many containers have ties that let you reseal them if you buy one of those brick containers carefully open the top flap unfold and open make sure that you pour all the coffee into A container with a cover.
    Because if you don’t it will in all likelihood tip over messing up your refrigerator wasting your coffee so if you’re going to buy bricks of coffee consider investing in a jar you could probably find one in the dollar store or you could get a baggie and reseal the plastic bag.
    I suppose you could carefully open all of the flaps and then try to re-fold it and then seal it with I don’t know duck tape or maybe scotch tape and then use an a blade to Open the tape eventually after a while they probably be enough room at the top of the bag to tie it up with a twist tie personally I think buying a dedicated coffee jar at the dollar store wouldn’t be a bad idea.
    Who knows you could go crazy and buy a dedicated sugar bowl maybe even A salt shaker add a jar to store the salt in.
