One is worth drinking and the other has chicory in it.
There are a lot of myths about when and why chicory was originally added to coffee but the truth is it was to stretch how many cups you could get out of a pound of coffee. Later it became a common practice in some regions and it took on mythical properties.
If it really was any good, it would be a more common practice outside of the US deep south and it may have even spread to Europe and Asia as well.

Chicory is used for the smell that we associate coffee with. It doesn’t add substantial taste, but the aroma.
While there have been a couple of answers here about the benefits of this abomination added to coffee I must tell you it is only added to make coffee cheaper and the taste vile. Whatever you do avoid it if you can.
Chicory is added to coffee to reduce bitterness and add body. It makes for a slightly sweet brew. It has about 70% of stuff that can be extracted as opposed to coffees 30%. So if you want a brew that’s heavier and less bitter that your 100% coffee add chicory as per your taste.
Stomachache. For few people like me and my cousins, light headedness on too much of chicory. Of course, chicory gives colour. A coffee with milk looks stronger on chicory coffee mix but lighter on pure coffee.

My answer: As I write I am drinking a cup of French Market medium/dark roast coffee with chicory. In my area there are 3 brands of coffee + chicory sold in stores; French Market, Cafe Du Monde and Community. We used to see Seaport which I have to say was quite vile. These 3 are different in taste. French Market has been our go to coffee for nearly 40 years and I think itβs the one my family in New Orleans brewed and drank.
As some have answered chicory adds a different flavor and tends to mitigate some of the bitterness in dark roast coffees. It also adds body to the drink. This last is nice for me as I no longer take cream or milk with my coffee. When I drink coffee at restaurants or as a guest coffee seems a bit thin to me and lacking of the chocolate and other flavor tones I have in my usual brew.
One caution chicory contains inulin, a polysaccharide made of fructose. It is poorly absorbed and in some people can lead to gastric destress – flatulence, diarrhea and bloating.
Chicory is added to coffee powder for extra flavour and to make it tasty in order to avoid bitterness. Coffee without chicory is the coffee which is blended purely without added any additional ingredient s.
Chicory, in fact , is a flowering plant. It was first used by France as a coffee subsitute to meet the growing demands. The root is what that gets roasted and ground to be mixed with coffee grains. Since chicory by itself was bitter, it was mixed with several other vegetables to reduce the bitterness. It sort of became a tradition to mix coffee with chicory, thereafter.
