A drip coffee machine of the American style catches most of the oils in the paper filter. The coffee tastes much more bland. Not all drip machines use paper filters though, some use a fine metal mesh and these would not filter out the oils.
The two brewing methods that remove the most oils are the Chemex and the AeroPress.
The Chemex uses a thick paper filter that is folded into fourths. This brewing method results in a very clean cup of coffee.
The AeroPress uses a single paper disc, but it somehow manages to catch a lot of the oils as well. I’ve served customers who couldn’t drink regular drip coffee for the same reason as you, but they could drink an AeroPress coffee.
