There isn’t a best level. There are levels that you personally prefer – for example I tend to prefer what is called a full city plus roast or an Italian roast. French is usually too dark and lighter roasts are usually less preferable to me. But I have really liked certain coffees roasted to French roast levels and I have liked others just lightly roasted. The flavor profile changes as roasting progresses but also comes from the individual bean. A coffee with naturally acidic and fruity characteristics might benefit from being roasted slightly longer to develop other flavors. Or not.
There is no best coffee roast level. The reason being is that the roast level is an individuals preference. Each person can claim why their roast level is the best. My preference is Dark Roast.

This will also determine the fruitiness or the smokiness of your coffee’s taste & flavor. Roasting level is also highly dependent on the kind of grinding you steak getting your coffee for. Also, the better the quality of coffee the more roasting pattern changes. Time of roasting also affects the levels. Fast roasting might enhance flavors but also be at the risk of turning burnt. Another reason to impact the roasting is the machinery being used. There are many types of roasters in the market from drum roasters to bed roasters. What may also determine roasting is its purpose, whether your coffee is being roasted for an espresso or a filter one.After the roasting process is over these are released now and it is show time, the finale of grinding these glorious beans into the ultimate magical powder!
There is no ‘best roast’ for all coffee beans. Depending on the bean and where it was grown the bean will tell the roaster a lot before the process begins. Some beans cannot take a full city roast or darker because the oils are to delicate while some will open up more at the darker roasts. Some will actually be their flowery best at a very light roast such as some Ethiopian beans.
The roast also depends on the flavor the drinker prefers iun their coffee. A city or darker will present a thin body while a near city or medium roast will have a more full and rounded body and light roast will tend to have a flowery or light and sweet taste to it.
Espresso roasts here in the US tend to be very dark and oily. Unlike Italian espresso roasts that depend on the darker roasting to bring on the bitterness and deeper flavor it uses a mix of Arabica and Robusta beans to balance the flavor of the lighter roasts.
