The easiest things are 1) a little sour cream, 2) extra vanilla, 3) a bit of extra cocoa (not very much) and 4) freeze dried espresso (Medaglia D’Oro) or good instant coffee (Starbucks Via).
Add a tablespoon of Mayonnaise to the mix and chocolate chips. Yes, mayonaounds gross, however the emulsified eggs and oil that make mayo adds moisture to the brownie mix.
The chocolate chips will of course add more chocolate, and you can never have enough chocolate.
I add three things: a tablespoon of instant coffee powder, two tablespoons of cocoa powder and a teaspoon and a half of vanilla extract. If you prefer not to use vanilla, add an equivalent amount of water: cocoa is very dry and without some extra liquid, your brownies will be dry.
These additions add deep flavor. They also help cut the over-sweetness of boxed mixes. I make the same adjustments to boxed chocolate cake mixes, and add an extra egg.
(1) One of my favorite brownie mix hacks is to replace the regular oil in the mix with a quality flavored olive oil such as blood orange.
(2) Replace the water in the mix with a sweet fruit wine (I don’t drink them, so it’s a good way to use up sweet wines I’ve been gifted). I was once given a godawful syrupy raspberry wine. It was terrible to drink but made great brownies!
(3) Fold in toasted nuts right before putting in the prepared pan.
(4) Beat some cream cheese, sugar, cream or half and half, and vanilla. Spoon blobs overtop of the brownie mix in the pan and swirl with a knife.
And always start with a decent quality mix. Ghirardelli actually makes a pretty darn good box mix.
Add some rum, or Kalua, Amareto, Irish Cream or… oh my, the possibilities are endless.
That is a sure way to make them taste like they did not came out of the box! Hic!
Replace the liquid with cold coffee. Add extra vanilla or change the vanilla to some other flavor like almond. Add a small amount of mint oil.
