  2. There is no such thing as the most desirable anything. That is a subjective classification typically driven by the fad-du-jour.
    Yemeni coffee is typically Arabica and is high caliber and first quality. This makes it desirable and definitely worth enjoying whenever you have the opportunity.

  3. Yemeni coffee is basically used for green coffee, ie. very slightly roasted coffee. It is used the same as Ethiopian coffee, mostly in Saudi Arabia for typical green coffee, which is flavored with cardamom or clove or saffron, depending of the makers custom. Sugar is never added. In Yemen, they completely roast the coffee and make what is called Qawa Sada, plain coffee which is mild roasted, ie. slightly brown, which has a mild taste, also sugar is not added, but cardamom is added if available. Also a similar coffee is made in Jordan and Syria, these coffees are very mild are are not like the Turkish coffee, which is usually made from very dark roasted Brazilian or Columbian coffee. A very excellent coffee is also grown in Tanzania as well, which is very similar. I have seen it being grown in the area of Arusha, Tanzania.
