  3. A2A Even though we call it a bean, it is really the fruit of a cherry tree. So it’s not a vegetable. Also, it’s not a juice, it’s an infusion. The difference is that a juice is made by pulverizing the fruit, and an infusion is made by steeping it in water to extract molecules from it. So you can call coffee a fruit infusion, but don’t count it towards your five daily servings!

    I would say no. If you were extracting liquid coffee from the beans, such as one would from an orange or an apple, then I would say yes you could call it a vegetable juice. But in this case you’re actually extracting essence from the beans to flavor water.

  5. The coffee bean is actually the seed of a coffee fruit. Since you can’t technically juice a seed, only the fruit itself, it wouldn’t qualify as a fruit juice, and certainly not as a vegetable juice.

    The beverage as we consume it, is an extract from the roasted bean (seed), sourced from the fruit (cherry) of the coffee tree.
    Juices are the liquid sap extracted from the stalks, leaves & fruits of raw fruits & vegetables etc.

    And technically, an aqueous extract of something is not the same as a juice.
    But ultimately the answer has little to do with the details of what coffee beans are or how they are processed to make coffee, and almost everything to do with how people attach meaning to the words, “vegetable juice”. By the criteria of accurate communication using precise language that conveys the intended meaning to the largest number of recipients, I’d say calling coffee “vegetable juice” would score very poorly.

  8. If you wanna get technical, then call coffee ‘fruit pit juice or Endosperm juice!’ We miscall the cherries’ pits (fruits of the coffee plants) as beans. They have nothing to do with beans (legumes). They just resemble beans, but are actually a seed from a type of fruit. Here is more….

    Also, as often as the term is used by many, a coffee brew is obtained from roasted seeds, not from beans.
    There is also ‘cascara’, called ‘quishr’ in Yemen, which is an infusion, not a brew, using the pulp of the coffee fruit, without its seed.
    Juice means to take the liquid from a vegetable/fruit and use it directly as a drink. It means to strain or drain a product of its water content.

  11. I suppose you could think of it that way, but I wouldn’t. Juice is pressed or extracted from the fruit or vegetable. Real orange juice, apple juice and carrot juice are examples. A tincture or tea is produced by steeping in water so that the desired compounds are dissolved into the water. That is what coffee is. Then you have flavored drinks, which may have little or no juice and are usually made from water, sugar, and synthetic flavors and dyes like soda, Kool-ade, or Sunny Delight.

  15. No, and here’s the reason:
    Coffee beans aren’t beans at all. Coffee beans (before roasting) are seeds of cascara, which is a stone fruit. After roasting they are dry seeds and I wouldn’t call seeds fruit. And then it’s ground and then traditionally filtered with hot water. So the closest you could really consider black coffee is tea if you REALLY wanted to push it. Calling a it a “juice” also would imply that you could squish the coffee bean/seed and get a liquid, which you can’t. So no.

    Same goes for Chocolate, it’s made with a bean, and a bean is a vegetable so it must be part of our five-a-day.
    Okay, moving on to beer. Beer is made from barley, and barley is a pulse, so comes under the category of a vegetable, so again, beer should be a part of your five-a-day.

    Butter is derived from cows milk, cows are vegetarian and only eat grass and sometimes turnips, grains etc, all vegetables so, butter is part of your five-a-day.
    Sugar comes from sugar cane, sugar beet, palm fruits etc so again, sugar is a part of your five-a-day.

No. Crushing the coffee fruits right after picking and collecting the juice or crushing/squeezing part of the plant could be considered making a “juice” from coffee, but roasting the beans (seeds), grinding them, then running hot water through them is preparing a plant extraction . Technically, it may be considered a kind of decoction.
    Preparing tea is the same thing, except you are using dried vegetative materials and not fruits or seeds. Not a juice, but an extraction.

Similar to a juicer, at this point, it goes through grinding. Then it is steeped in hot or cold water until the right flavor blooms out of the grounds.

  34. No, because coffee beans aren’t eaten by themselves like other beans. They’re sometimes roasted and covered with chocolate for a snack, but it isn’t the same. I like to mix a little coffee in a whole lot of milk, but I would never do that to beans that I consider vegetables. And my brother would probably have never touched coffee if he thought it were vegetable juice instead of coffee because he liked his coffee black.

  36. It is made from the endospermata of Coffea cherries. Coffea is not a genus in Fabaceae, so the “beans” are not real beans like the seeds of Phaseolus or Faba species. Also, there is very little fiber that is extracted in the coffee brewing process, so I would hesitate to call it a “vegetable juice” on those grounds. A “botanical extraction” is probably more correct.

    Before they even get to that process, they dry the beans by placing them directly under the sun. Which means all the moisture that was inside the beans has evaporated, leaving the beans dry but some of the moisture is still in there so when roasting them, the heat takes out all that moisture that is left.

It’s kind of like thinking of the difference of cashews which are the seed of a fruiting body from a cashew apple tree than that of drupe category such as nuts which are technically a fruit from a tree, and are in the same drupe category as a coffee “bean” cherry fruit seed.
    The main distinction is how the legume pod is categorized as having many fruiting seeds, whereas a nut has a harden shell, and a drupe is a tough fruiting endosperm. So I suppose the key emphasis is that a bean plant can be considered a vegetable but the seeds are fruit, hence the song, “beans, beans, the musical fruit, the more you eat, the more you toot.”

    There is some debate on how to classify the coffee bean. Coffee “beans” are not beans (legumes) as such, they are seeds from the fruit of the coffee tree. To be a vegetable juice, the juice would be derived from parts of the plant but not the fruit of the plant. Since coffee is the seed of the fruit, then coffee should be fruit juice, not vegetable juice. Or maybe “seed juice”?
    That’s how I understand the taxonomy of coffee seeds.

  42. Interesting question, but no. Beans although very healthy for you, are technically legumes, so not vegetables. Coffee “beans” are not actually beans at all, they are the seeds out of a fruit/coffee berry. So I guess drinking coffee is drinking cooked fruit/seed juice… The most important piece of information to remember about coffee is that in its pure form (no added milk or sugar), coffee is great for you in moderation. 1-3 cups a day of strong coffee has been shown to have many health benefits.
