Coffee has been brewed for well over 5 centuries. Historians tend to differ with the genesis of coffee usage by humans.
The first thing is that roasting the coffee seeds and brewing the grind with water is not the way it began. At some point the leaves where used to obtain the caffeine – similar to wine, then the pulp of the cherry was steeped in similar fashion to the way we know it today with tea. At some point we began doing it the way most cultures do it today.
At that juncture it goes in many directions.
The Ethiopian woman will conduct a ceremony where the seeds are roasted, ground with mortar and pestle and then brewed. This is done three times with the same grounds, and it is an old tradition for true hospitality.
The Turks and Greeks use different coffee seeds and grind them finer than that used for espresso. Some heat the water in heated sand, usually with sugar included and small portions are served, at times with cardamom, cloves and other spices.
In parts of Asia the seeds are roasted with fish oil. In Japan they might use a siphon, pour overs with cloth filters and some use espresso machines. Needless to say, the Italians are famous for the espresso brewing, although the French were the first to come up with such a machine. In Scandinavia there is one tradition of breaking the coffee seeds, instead of grinding them.
