You can make it less strong, by adding more water per tablespoon of beans (or less beans). You can add milk, cream or any number of milk substitutes, just don’t use “creamer” (coffee mate, international delights, or that sort), as they are mostly sugar anyway.
You can use other sorts of sweeteners, like honey, erythritol, allulose, Sucralose, saccharine, xylitol, etc., but not aspartame, as that is toxic.
You could learn to drink it black. I had to when I was waiting tables, because we never had time to doctor our coffee…just pour and drink!
Many years ago (1980), Braun made a device that you poured purified water into and it heated the water up to around 190 F (88 C) and then released the heated water over coffee grounds in a container which dropped into a coffee carafe. I believe the purpose was to avoid overheating the coffee which should reduce bitterness. Perhaps you can find one or attempt to duplicate the process yourself. I searched for a photo in the internet but couldn’t find one.
I always put a little milk in it. I never put sugar in my coffee.
Try the cold brew: one cup of coarsely ground coffee mix with four cups of tepid water; put in the fridge overnight (about 14 hours ),then use it as concentrated: mix one part with two parts of non dairy milk.( sweeten with maple syrup with cinnamon on top)!
I prefer a full fat cream as this takes the edge off very strong coffee or espresso. You could also use a sugar alcohol, which tastes like sugar but has no effect on the insulin. By this I mean xylitol and erythritol, of which Swerve is a common supermarket brand. You may try stevia, though I find it has an aftertaste that is a little off-putting. Monk fruit sugar is another very sweet substance that has no effect on insulin and no calories as well.
I would avoid the artificial sweeteners like aspartame as this has been linked to all sorts of nasty health stuff. The sugar alcohols get a free pass though, xylitol and erythritol. Check the ingredients…
Coffee doesn’t need to be bitter.Buy the most expensive coffee BEANS and get them ground. Ask for the mildest blend in a shop and put a level tablespoon in a cafetière. Add a cup of grounds. Add boiling water. Leave for three minutes. Pour add your poisons( sugar sweetener milk cream )or whatever.
Taste. If you like it -it’s correct.
Too bitter for you? Then Repeat brew using half a tablespoon of coffee this time . Taste. Still too bitter? throw coffee away and go and buy a milder blend. Repeat.

Do not add boiling water. Allow the kettle to cool for two minutes before making your coffee. If using a percolator or coffee maker, add a few drops of cold water to the mug before starting the coffee making process.
Add milk or cream.
Use coffee and chicory mixture instead of pure coffee.
Use stevia or other sweetener in place of sugar.
Get used to the bitter taste.
If you use a courser ground coffee it will be less bitter. I have used a courser ground in my espresso maker and it produced a mellower cup of coffee.
