Just to add to what others have said, part of the grain bill for Guinness is roasted barley – I believe it’s around 10% at an SRM (Standard Reference Method) of 900, which is dark but not black – Guinness is actually a deep red if you shine a light through it. Roasted barley of a similar colour is used as a coffee substitute – not a particularly nice one but with a reasonable coffee flavour.

  3. Because Guinness is made with roasted grains, and coffee (and chocolate) are made from roasted beans. Grains and beans are all basically made out of proteins and complex starches, and so they develop many similar flavor components when they’re roasted to a deep, dark color.
    Note that there are many stouts which do contain coffee or chocolate as actual ingredients, since they can help to reinforce and complement that nice roasted range of flavors. Guinness just doesn’t happen to be one of them.

  4. The barley roasting process creates some of the same compounds in malt as in coffee or cacao. So your mouth and nose associate the smell with the taste of coffee.
    Similarily, when you smell a Sauvignon Blanc, it may smell like cat pee due to the fermentation of the grape varietal. Rest assured no felines have micturated in or on your lovely wine.

  5. Your taster is never wrong, but it catches a specific note in Guinness depending on the pour.
    Guinness tastes wet and milky at first (depending on how well it is poured). If your Guinness is poured badly it will be more watery than milky. It then tastes roasty ( like coffee ) and has a heavy dark wheat taste . It is actually not as heavy in body as you might think.

  6. To me, it doesn’t. I get more of a taste that resembles how pipe tobacco smells. I often wonder if the color of Guinness leads people into thinking it tastes like coffee.
