Some manufacturers use brewed coffee, some use coffee extract, some use spray dried coffee, some use natural and/or artificial coffee flavoring, and some use a combination of the ingredients listed above. If the label says made with “natural coffee flavoring”, “natural and artificial coffee flavoring”, or “artificial coffee flavoring” then the ice cream probably does not contain caffeine unless the manufacturer adds it in separately. If the label says “coffee” or “coffee extract” its safe to assume there is at least some caffeine in the ice cream. Now for those ice creams that do contain coffee the caffeine levels are dependent on formulation. Other brands such as Haagen-Dazs, Edy’s, Breyer’s, Dreyer’s, Starbucks, etc. contain varying degrees caffeine according to this chart compiled by the Center for Science and the Public Interest: Center for Science in the Public Interest . This is probably due the fact those companies are more focused on formulating a delicious coffee flavor for their ice cream and less on the overall caffeine content.
And yes, in theory a ice cream formulator could use decaf coffee if they wanted to. However, speaking from experience, most ingredient vendors only offer one or two decaf coffee options because it is not as popular as caffeinated coffee. Therefore, when making coffee ice cream or gelato recipes, I go for the caffeinated coffee because I can experiment with different blends and roasts, even single origin and certified fair trade coffees, that are usually not available in decaf.
I don’t think they use real coffee in an ice cream, because most of the product are using coffee flavoring / essence, so the ice cream coffee may not contain any caffeine.
