  1. You will typically buy roasted from a specific supplier who you trust. Most shops don’t want the expense and wasted space of a roaster, plus the time spent roasting and maintaining it. As to how much you might order it really depends. Normally beans are best say 3-5 days after roasting and then reduce in quality after maybe another 2-3 weeks. So you don’t want to order too much, but do want to order just enough. It’s a balancing act if you want best quality and price and minimal effort (ordering is at least a phone call or email and then the payment processing when bookkeeping. I used to order weekly based on needs, sometimes more and sometimes less. My beans were roasted day of order and sent out same or next day, then arrived within a couple of days. This means you can be pretty reactive about it. My roaster would also send out next day delivery if needed at additional cost. I had a couple of times when other local shops ran out and needed to borrow some beans. I never did. But I was owner/manager and not just a manager.

  2. Usually a coffee shop will buy roasted beans from the roaster of their choice. In Melbourne, Australia a number of operations roast in house and serve their own coffee. These types of cafes would buy green beans from an importer of which there are few in Australia.
    Alternatively, there are coffee roasting collectives where you can pay rent to use communal roasting equipment. They are wonderful for networking and sharing knowledge as many different people could be there roasting at any one time. Collectives require a minimum roasted amount for you to join up, perhaps 20-30kg.
    The coffee shop I work in currently buys roasted beans from the roaster and we move about 35kg per week.

  3. Your original question needs a lot more information to give a correct answer. So, if we make some statements, a ‘so called valid’ answer may given.
    Here in Hungary, most (99 out of 100) cafés buy roasted coffee. 1 usually have a small or medium sized roaster and make my own ‘blend’ (for example, Műterem Kávézó, Café Alibi, Lumen, A Kávé Háza).
    Since most (if not all) roastery offers 1 kg packages (smallers are rare), I always suggest to use 1 kg (one package) / week quota as a minimum. A 1 week old untempered, open-package coffee is a straight way to quality problems. So, let’s count with a base of 1 kg/week (200 gramms a day) average as a minimum. Some of the best working cafés (My Little Melbourne, Espresso Embassy) often use over 5 kg/day, which means over 400 espressos (or espresso based drinks) served.
    Some chains, like Strabucks, Costa or California Coffee usually make more servings (over 500 on a busy day), but they’re using different standards with seriously less ground coffee/servings (usually around 7-8 grams instead of 11-12 gramms in artisian cafés), so overall coffee consumption may less or just equal.
